Hearty Split Pea Soup PDF Print E-mail

2 cups green split peas
2 carrots, diced
2 stalks of celery, diced
1 onion, diced
1 pound corned beef, cubed
2 quarts water
2 teaspoons salt
pepper to taste

1. Cover split peas with cold water and soak overnight. Drain and rinse.

2. Place cubed meat in salted water. Bring to boil, reduce heat and simmer for 1 hour. Skim. Add remaining ingredients. Simmer until the peas are tender, about 1 ½ hours.

3. Let soup cool and in small batches puree. Soup may now be served or frozen for later use.
